Boomer Esiason Baked Quesadillas

Mix 1 jar Hidden Valley ranch dressing, 1 bag mexican shredded cheese, 1 can drained diced green chiles canned, 1 can chopped chicken in bowl. Add chipotle seasoning and hot sauce to taste. Place thin layer in small soft tortillas, cover with another tortilla. Place on grill and add cheese on top. Grill until cheese oozes over side.

Preheat oven to 400 degrees (or get your grill ready). Cut each bacon slice into 4 pieces. Wrap each smoky with a piece of bacon. Secure with a toothpick. Place in a 13x9x2 pan. Sprinkle brown sugar on top. Bake for 30-35 minutes until bacon is crisp and sugar is melted.

Mix 1/2 jar Franks red hot sauce, 14 oz roasted red peppers, 1 small can tomato paste and frozen gourmet meatballs together. Blend/chop red peppers then add in meatballs. Add additional hot sauce to taste. Serve on warm hoagie roll. Add additional hot sauce as needed.

Mama Riss’ World Famous Scream Cheese Brownies (shhh, it’s a secret)

Mix brownie mix, spread 1/2 of it into 9×13 inch pan sprayed w Pam. Mix cream cheese, butter and sugar until light and fluffy. Add eggs, vanilla and flour and mix well. Add orange food coloring to desired color. Spread cream cheese mixture on top. Drop remaining brownie batter on top and pull a knife through. Bake 30 min at 350 degrees. Serve with love and who dey spirit.
